Tropical Satvic Salad

Ingredients Required:
1 head romaine lettuce (organic when possible)
1 cup halved cherry tomatoes
1/2 cup alfalfa sprouts
1 cup finely shredded carrots
3/4 cup thinly sliced red cabbage
1 medium ripe avocado (cubed)
1 Tbsp hemp seeds (optional)

For the Sauce:
1/3 cup tahini (raw, untoasted)
2 Tbsp lemon juice
1 Tbsp date paste (substituted for maple syrup)
1 pinch sea salt (optional)
Water (to thin)

Step1:
Prepare the Sauce:
In a small mixing bowl, whisk together tahini, lemon juice, date paste, and optional sea salt. Gradually add water, one tablespoon at a time, until a pourable dressing is achieved. Adjust flavors as needed.

Assemble the Lettuce Boats:
