Refreshing Satvic Green Salad with Citrus Dressing
For the Salad:
mixed greens 2 cups (such as baby spinach, arugula, and watercress).
Baby Tomatoes: 1/4 cup (about 40g), halved.
Shredded Carrots: 1/2 cup (about 50g).
Pomegranate Arils: 1/4 cup (about 40g) (or any fresh fruit of your choice).
Sunflower Seeds: 2 Tbsp (about 20g), soaked overnight for better digestion.

Jaggery Powder or Date Paste: 1-2 tsp (to taste)
Rock Salt: 1 pinch (to taste)

Step 1:
Prepare the Dressing:
In a mixing bowl, combine:
3-4 Tbsp fresh lemon juice
1/4 cup coconut cream
1-2 tsp jaggery powder or date paste
1 pinch rock salt
Step 2:
Whisk together until fully combined. Taste and adjust sweetness or acidity as needed.
Step 3:
Assemble the Salad:
In a large serving bowl, add:
5 oz mixed greens
1/4 cup halved baby tomatoes
1/2 cup shredded carrots
1/4 cup pomegranate arils
2 Tbsp soaked sunflower seeds
Season with 1 pinch of rock salt.
Step 4:
Dress the Salad:
Just before serving, drizzle the citrus dressing over the salad. Toss gently to combine, ensuring all ingredients are coated.
