2 Tbsp extra virgin olive oil (preferably cold-pressed)
1 ½ Tbsp apple cider vinegar (raw and unfiltered for health benefits)
2 Tbsp minced shallot (optional; can be omitted for strict Satvic diets)
1 clove garlic, grated or pressed (optional, as some Satvic followers may avoid garlic)
1/4 – 1/2 tsp sea salt (adjust to taste)
4 loosely packed cups shredded kale (preferably Lacinato or curly kale; about 100 g)
1 medium sweet, crisp apple (such as Fuji or Honeycrisp), sliced into thin matchsticks (about 170 g)
1/2 cup chopped fresh parsley leaves (optional but adds freshness)
